Looking up

After a somewhat chaotic week things are beginning to look up. My flu has passed, workload has decreased and I'm feeling more positive and back to my normal self again. I'm excited by this next week - the commitment I'll be making to husband to be, my Dad proudly walking me down the aisle, my Mum shedding her many tears, sharing good food and laughs with our family and in general a significant time in our lives. Time to pause

I'm finding it quite hard to relax at the moment with the wedding being less than 2 weeks away. I've started to develop a cold, spots are appearing and my legs are aching with all the exercise I've been doing. I attended a yoga class last night in the hope it would help me relax but I had quite a restless nights sleep. So today I'm making an extra effort to pause, breath and open my eyes to the little, simpler details around me. Flickr photo by Nathiya.

Coco Cake Boutique Cupcakes

How fun and yummy do these look! Vancouver based cake maker Lyndsay Sung, creator of Coco Cake Boutique Cupcakes makes the most colourful and delicious looking cupcakes and cakes I've ever seen. I think it would be a kids dream (including us bigger kids) to have one of these for their birthday, or any celebration. Lyndsay also has an ice cream blog with some really yummy recipes worth taking a look at.

3 weeks until a little fun and magic

3 weeks today we will be sitting on a plane on our way to Orlando for a few days of fun and magic. There is an element of cheesiness in spending our honeymoon in a theme park I know but the thought of nighttime fireworks, parades, rides, Mickey Mouse waffles and in general the feeling of being free and acting like a child again fills me with excitement.

And yes that is my future hubby and myself as wee little ones shown above.

Antonios Mitsopoulos

As much as I like flipping through my Donna Hay magazine each month and scrolling through the pages of food blogs for yummy recipes, I'm really drawn to the styling and beautiful photography in them. Food styling and photography is an art and one which I'd love the experience in at some point in my career. Antonios Mitsopoulos works in Paris and has a really nice series of food photographs. Lemon fish

As mentioned in previous posts I've been on a pre-wedding diet which has consisted mostly of fresh salads, veges and lean meats & fish. The husband to be gets bored of the same thing though so I found this yummy recipe for lemon fish on Sprouted Kitchen. Their version is accompanied with polenta but we had ours with sauteed vegetables. I speak on behalf of the both of us when I say it was very yummy and thoroughly enjoyed. Recipe below.

Lemon fish

• 2 6oz pieces of Pacific Cod (or what is sustainable and available near you)
• 1/4 cup good quality feta cheese (I used Persian Feta)
• 3 tbsp low fat greek yoghurt (sour cream or mayo work as well)
• 1/3 cup chopped parsley, divided
• 1 lemon, sliced very thin and a bit of juice
• Fresh pepper

In a small bowl, mix the feta cheese, yoghurt, garlic salt (I used fresh garlic & a sprinkle of sea salt), lots of pepper, a little lemon juice and 2 tbsp of the chopped parsley. Mix. Coat with cooking spray either a small baking dish or baking pan, put the fish skin side down. Sprinkle fish with pepper and a pinch of salt. Divide the feta topping on top of both pieces and lay a few slices of lemon on top slightly overlapping. Drizzle with a tiny bit of olive oil. Put it on the top rack of the oven and keep an eye on it. Fish should take about 12-15 minutes depending on thickness. To serve, sprinkle with a generous amount of parsley.

Winter in Amsterdam

Friends Cath & Alan have been living and working in Amsterdam and I stumbled across these photos they took which featured on Pia Jane Bijkerk's blog. How magical does it look there in the winter! Really beautiful photos.

Pia also recently posted some photos from her stroll through the snowy town of Amsterdam shown below. Makes me want to escape the humidity here in Brisbane for a while and drink hot chocolate in a cozy cafe while it's snowing outside...

Mast Brothers Chocolate Factory

The Selby did a photographic documentary of the Mast Brothers Chocolate Factory in New York. The photos illustrate the whole process from when cocoa beans are roasted to the final stages of packaging. So much time and care looks like it goes into producing their chocolate and it's nice to see they are packaged so beautifully. There is something special about opening a bar of fine chocolate. I almost feel like Charlie from Willy Wonka & the Chocolate Factory. Link found via All the mountains.

Dreaming of a Leica

For some time know I have been wanting to learn more about film photography. Digital is so easy and convenient but there is a depth and soft grain to film photographs which I love. There is also the curious excitement you feel as they are being printed. I would love to eventually invest in a Leica. They don't come cheap but they really do take beautiful photographs and I think it would be a camera you would hold onto for years.

A piece of cake

I thought this wedding cake looked quite cute. It's simple and elegant and I love the cake stand it sits on. I've spent a bit of time looking online and through magazines for cake references and I find I keep coming back to a simpler style of cake. I have sourced linen ribbon to line the base of our cake and when decorated with some blue hydrangeas it should hopefully look quite nice. The cake itself is being made by one of my favourite cake makers - The Welsh Lady. I'm looking forward to enjoying a piece, or two.
