Today is Australia Day. It's a typical 32˚ day here in Bris with not a cloud in the sky. I'm still on my pre-wedding diet so trying very hard to be good but wishing I could make some of these. Lamingtons are an Aussie classic consisting of sponge squares covered in chocolate and coconut. Very yummy. The recipe is below, found on Donna Hay. Photo by Con Poulos. Lamingtons
• 1 quantity basic sponge cake
• 3 cups (480g) icing (confectioner's) sugar
• 3/4 cup (75g) cocoa powder
• 1/3 cup (80ml) boiling water
• 75g butter, melted
• Dessicated coconut, to coat
Make 1 quantity basic sponge cake in an 18cm-square cake tin and cool on a wire rack. Cut into 6cm squares. Sift together the icing sugar and cocoa. Mix with the boiling water and melted butter. Using 2 forks to hold the sponge squares, dip in the chocolate icing and roll in dessicated coconut. Allow to set on a wire rack. Makes 9.

Weren't they! They were the best. I did cave yesterday and actually baked scones with jam & cream. Very yummy but felt a bit guilty. Did a big gym session this morning though so all good :)
